Combine flour, cocoa, baking powder, salt and cinnamon. In a large bowl, combine shortening and sugar beat until light, add eggs and beat until mixture is light and fluffy. Add the potatoes and vanilla mix until smooth. Stir in flour mixture to creamed mixture alternately with milk. Add nuts. Pour into a greased 13 x 9x 2-inch pan. Bake at 350 degrees for 40-45 minutes. Frost with your favorite chocolate frosting or sprinkle with powdered sugar.
Dark Spice Cake
1 cup white sugar
1 cup raisins
1 cup water
Third cup lard
1 tsp teaspoon nutmeg
1 tsp teaspoon cloves
1 tsp teaspoon cinnamon
1 tsp teaspoon baking soda
1 / 2 cup cold water
1 tsp teaspoon baking powder
2 cups flour
Preheat oven to 350 degrees.
Boil sugar, raisins, 1 cup water, lard, nutmeg, cloves and cinnamon until the raisins soften, about 5-10 minutes. Cool the mixture. Stir in soda water 1 / 2 cup cold mixture and add to raisins. Add yeast and flour. Mix all ingredients together and pour into a well greased and floured 8 x 11 inch pan. Bake until cooked through. It not a typo: no eggs or milk are used in this recipe.
